鰻
鰻の名店石ばしに行く。
出てくるまでに40分〜1時間はかかる。
関東分の鰻はこの石ばしと南千住の尾花と神谷町の野田岩が有名だ。
関東風鰻といえば背開きで蒸してから焼くが、関西風は腹開きでそのまま焼く。
関東は切腹を嫌って背開きにしたというが、プニョプニョした腹よりも身のしっかりついた背のほうが包丁を入れやすいからじゃないかな？切腹うんぬんの話も後付けのような…。
蒲焼きって言葉は蒲の穂のような焼き物って意味で、これは鰻をぶつ切りにして串刺しにして焼いてたわけだ。江戸時代も前半から中期までは、開いてない鰻が一般的だったはず。ましてや、町人がそんなに切腹にこだわったのか？ちなみに関西では「背中から斬りつけるとは卑怯やんかぁ」と腹開きにするなんて説もある。でもこれも後付けでしょうね。
背開きは身の薄い腹の部分が中央に寄り、腹開きは身の多い背の部分が中央に寄る。
蒸すか蒸さないかはふっくらと油ギッシュの違い。
